Hump Day Eats & Drinks ...

I mentioned last week on Hump Day that I am not a big fan of cooking.  It stresses me out to prepare a meal whilst trying to wrangle the schedules of three kids.  I am not sure how well I do it .. but I make it happen a few nights a week.  I am a huge believer in a family meal together.  We sit down together at 6:30 during the week and whether I have slaved over the preparation of a meal or the menus of take out ... we sit down together and eat.  

I do, however, love cookbooks.  The cookbook must have a picture of the item or I will not make it.  I am a visual learner ... and the picture seals the deal for me.  Pinterest fits this bill perfectly.  I get to see how it looks prepared to decide if I want to tackle it.  I have a fabulous board full of yummy looking food ... perfectly labeled YUM for this exact purpose.  If I don't like the picture, no matter how good it may sound, its not getting pinned and therefore won't be getting made.

I LOVE iced tea and this recipe is TOO. DIE. FOR.    Pin it, make it and say its a family recipe that you can't share.  I won't tell a soul.


I am simply calling this chicken The Best Chicken Ever.  Lawyer made this for my birthday in January and I am still dreaming of the shallots and wine.  The sauce will make you want to slap your Mama.  Pinky swear!!


I am itching to create this exact picture.  Doesn't it look amazing?  I would do it on our annual girl lake weekend in two weeks, but they insist I make Paige Eggs (as they call them).  I will find a reason to do this and it will be sooner rather than later.


Those would be pancake batter poured over bacon strips.  I am pretty sure my kids would call me Mother of the Year if I made these.  Must schedule that, too.


This hot caprese dip is FABULOUS.  I have made it now twice and I will swear by it.  This and a bottle of wine and I am good to go!  (Clearly I mean to share this and the bottle of wine ... or maybe not)


I love pasta.  I crave pasta.  Pasta is my comfort food.  And wonderful pasta you can make all in one pot, that's my kind of meal.  Pair with a great salad and invite me over.  STAT.


Dark chocolate chunk, pistachio and sea salt cookies.  I mean are you kidding me??  I may or may not want to lick my screen. 


Roasted broccoli with toasted almonds, lemon and pecorino cheese ... Sounds like one amazing side to me.  I see this paired with grilled chicken or salmon.  But since I am not a fan of meat, I could just eat this for dinner.  Figure out how to incorporate this with pasta and I will probably propose to you.
