Our yearly lake girls trip is just one day away and I am beyond ready to go. It is by far my favorite weekend of the year. For a number of years 10-12 of my friends gets together and heads to Blue Ridge, Georgia for the weekend. We eat too much, drink too much, laugh until we pee and restore our selves until the next year when we do it all over again. Lawyer comments every year that he doesn't understand why I come home more tired than when I left. Boys ... they just don't understand girl chat until the wee hours!!!
I am responsible for Saturday morning breakfast. Every year I make the same "Paige Eggs" or "Birds Nest Eggs" as they refer to them. They are amazing and delicious and perfect for a large crowd. I found the recipe years ago in a Rachel Ray $40 a day book. You remember the 30 minute meal show she did ... make a great meal in under 30 minutes. Yeah ... only if you don't have small children or dogs or life going on at the exact time. Heck ... it takes me thirty minutes just to gather all the stuff I will need to make it happen.
Back to "Birds Nest Eggs" ... these are the most amazing eggs I have ever eaten. They are special occasion eggs. Birthdays, family gatherings, celebration ... just not your every day I am gonna make breakfast eggs. That way they remain special!
Ingredients
8 slices Tuscan style bread
12 eggs
1/4 cup water
1 teaspoon kosher salt
1/4 tablespoon hot red pepper sauce
1 ounce sweet butter
5 1/2 ounces Montrachet goat cheese, softened
1 1/2 ounces marinated sun dried tomatoes, julienned
Fresh basil leaves, as garnish
Basil Pesto, recipe follows
3/4 cup chopped fresh basil leaves
1 cup olive oil
3/4 cup grated Reggiano Parmesan
1/4 cup pine nuts
2 cloves garlic, chopped
1/4 teaspoon kosher salt
1 turn fresh black pepper
2 teaspoons lemon juice
Toast the bread and keep while preparing the eggs. Combine the eggs, water, Tabasco and salt in a bowl and whisk until smooth. In a large non-stick omelette pan, melt the butter and add the eggs, stirring with a spatula until the eggs are gently scrambled. Spread the soft goat cheese equally over the slices of toast. Add the scrambled eggs on top of the goat cheese and cut each of the toast slices in half. Put 4 halves on each plate and garnish with sundried tomatoes, fresh basil leaves and drizzle with basil pesto.
Basil Pesto:
Combine all the ingredients, except for the olive oil, in a blender. With the blender running, slowly drizzle in the olive oil.
I copied the recipe directly from the website so I would not leave anything out. I didn't want your eggs to disappoint. I will tell you a few things. I don't serve mine on bread. I think they are amazing as is ... but I am sure they would be over the top fab on crusty bread. I also buy store bought pesto. They make such amazing pesto at Whole Paycheck so I don't need to make my own.
Be prepared ... when you make these your peeps will beg for the recipe. You can tell them where you found it or you can say its a family secret and keep it to yourself. I won't tell a soul.
"Birds Nest Eggs" are served with fresh berries and either a Bloody Mary Bar or this year a Prosecco Bar.

Speaking of the amazing Emily ... don't you just die over this bar cart decked out for her Prosecco party?? I mean it is to die for. The cups, the stirrers, the coasters and those napkins!!! Swoon! I would pack my Emily McCarthy monogrammed cocktail napkins for the lake. but those are for home. We need a couple packs of those amazing napkins you spot while shopping and you think "OMG those are hilarious, but I can't possibly give those to anyone". Yep ... this is THAT trip!!!
One more sleep ... and it can't come fast enough for moi!!
