My favorite food, other than a huge plate of pasta, is a salad. And not just a iceberg, two tomatoes and a cuke side salad, but a SALAD! I do not love to cook, but I can whip up a mean salad in record time! I try to keep good salad ingredients in the house at all time. I have them chopped up and ready to go and then its easy to prepare yummy salads. The kids call it a salad bar ... which I suppose it is to them. All the containers set out and ready to pick from makes things so much faster for me.
I have go to items I always purchase and then some special items I get when they sound yummy ...
Salad staples
Romaine hearts
Kale
English cucumbers
Shredded carrots
Boiled eggs
Grape tomatoes
Sunflower seeds
Dried cranberries
Sliced almonds
Feta cheese
Avocado
Grilled chicken
Special items
Artichoke hearts
Hearts of palm
Berries
Mandarin oranges
Pea pods
Edamame
Green peas
Tuna fish
Salmon
Black bean burgers
Let's just say you can never know what to expect in your salad of the day.
My go to salad comes from a blogger I absolutely adore ... Summer is a Verb.
That is one yummy meal!!! Alice posted this recipe on her blog in October of 2010 and I promise you I have now made this salad so many times I no longer need a recipe! Its so fab and so addictive! The best part about it for me is the homemade dressing. Nothing fancy ... but delish Oh and get some good croutons. She recommends Gardini's and I completely agree. Go big with your croutons, nothing generic and small will do here!
2-3 garlic cloves, minced
1 Tablespoon honey dijon mustard
1/4 cup balsamic mustard
1/2 cup olive oil, the good stuff
Mix together in a mason jar and keep until you need! Although I would recommend making a double batch since you will become quickly addicted!
This summer I am hoping to mix it up some and try some new great recipes.

Deletelove a great sald.. do your children like all the GOOD stuff too or just the fattening stuff..ie cheese croutons etc.. I like to throw a BEET in ther eto scare them!
ReplyDeleteThey eat quite a bit of it. They don't love artichoke hearts and tomatoes ... but they seem to make do. I love beets ... such a good idea to add them! xo
