Homemade Salsa


Homemade salsa is a favorite in our house.  If someone spies a few of the ingredients on the counter they always say the same thing ... OOOH, are you making salsa?  I got the recipe years ago and it is a easy thing to make the day before and keep in a glass container with a lid for a weekend, trip to a friend's house, or even a trip to the lake.  We love it so much.
 
  
I am a sucker for an easy recipe that packs a punch and this is one of those good ones.  The ingredients are easy to keep on hand for when you need to make a batch, and it is easy to make and share.  I love the idea of making a double batch and then gifting it to others in a ball jar with a bag of your favorite chips.  It is a crowd pleaser for sure. 

I am telling you it is so easy to make ... 

1 can of Rotel tomatoes, do not drain
1 can of corn, drained (you can use left over corn on the cob as well)
1 can of black beans, drained
1 8 oz bottle of Wishbone Italian dressing
1 bunch of cilantro, chopped and stems removed
1 bunch of green onions, chopped fine (more if you like)
2 ripe avocados, chopped (keep the seed)
1 t of kosher salt

Mix all ingredients together.  I mix it all and then add the avocado the day we are serving it to make sure it is fresh.  I also put the avocado pit in the bowl to keep the avocado green. I think it is best made the day before to let all the flavors marry!


When I make it I crave Mexican food so I make it when we can have tacos, taco bowls, nachos, and taco salads.  The last in the bowl is the most coveted in our house.  It is really so yummy!
