Cinco De Mayo ... at home!


Anyone else love Cinco de Mayo?  It is one of my favorite times to meet up with our best friends at our local Mexican restaurant and just hang out.  I am a girl who loves all things Mexican, I could eat it all day every single day and never get tired of eating it. Give me all the avocado, cilantro, grilled chicken + veggies, chips and most definitely salsa. As I type this I am thinking of Mexican for lunch ... yes please!



Since we are all eating at home today ... I have planned to make some salsa, guacamole + tacos with all the margaritas, please and thank you.  My daughter is taking a culinary class and is required to make things for us and today she is putting together the salsa.  It is an easy recipe and is one of our favorites here at the house.  It is chunky, as spicy as you want it to be, and so very delicious.  The recipe makes a big bowl full and I keep it in the refrigerator and the kids snack on it all week long.  It is so good added to so many different meals, breakfast burritos being one of my favorite things.   The flavors and ingredients marry so well and its so yummy.


You will love it and since it is so easy to make, you can make it weekly!

Bean + Corn Salsa ...

1 can black beans – drained & rinsed
1 can corn – drained (I use the white + yellow mixed)
1 can Rotel tomatoes, do not drain
1/2 cup chopped green onions
1/2 cup chopped green pepper
1/4 to 1/2 cup finely chopped jalapeno peppers, seeds in if you like it extra spicy
1 can petite diced tomatoes – do not drain
1/2 teaspoon kosher salt
Fresh cilantro to taste (I use a lot)
2 avocados diced, leave one pit in the finished bowl of salsa
1 – 8oz. bottle Wish Bone Italian salad dressing

Combine all ingredients in a medium size bowl with a lid. Cover and refrigerate overnight. Serve with tortilla chips.


While we were in the hospital we met the most precious woman who would pop in to check on us and to clean his room every day.  I loved Rosa.  I loved her stories, the way she talked about her family and how much the staff adored her.  She spotted me eating lunch and one day and our conversation turned to homemade guacamole.  I told her I really wanted her to share her recipe with me and one day she showed up with it all written out for me and I felt like I won the lottery.  She was so proud to hand it to me and I was more than honored to have it.  It is the best guacamole I have ever eaten, and I will always think of her when I make it. 💗

Rosa's Guacamole ... 

3 avocados
1 bunch of cilantro
2 tomatoes
2 limes
1 jalapeno pepper
Salt (to your taste)
Half of an onion, white or purple your choice

Chop tomatoes very well.  Chop onion, cilantro (cut stems off), and jalapeno pepper.  Slice and mash avocados in a bowl, leaving them thicker than mashed potatoes. Add chopped vegetables to the bowl and mix well. Squeeze lime juice into the mixture and salt to taste.  Use a small amount, taste and adjust it as you like it.  enjoy!


We will be ordering in tacos and fajitas ... it just tastes so much better than the ones we make ... and then adding in our salsa and guacamole.  Oh, and all the homemade margaritas.  Have you tried this recipe yet, I think it is the best I have made and we have had so many since I started making them.  It feels like Taco Tuesday so many days of the week, so why not?

I feel like the margaritas need to be a little stronger today since we are missing be able to celebrate with our best friends at the local joint on the one Cinco de Mayo that occurs on Taco Tuesday ... I mean can you even?
