Banana Bread Pudding


I honestly don't think I have ever been more proud of myself in the kitchen.  I baked something and it was incredible ... and turned out perfect the very first time.  If you know me in real life you understand this is a major feat for me.  While I was preparing it my oldest walked in the house and asked me if I was planning to bake something and the commented ... "who are you"?  It isn't his fault, I am not accomplished in any way at all in the baking department.  I have burned many things, had cakes fall and once even baked a cake for a family member for their birthday only to be asked not to do it again.  It was awful and bless her for even trying it. 🤣




But this time was completely different.  I found a fabulous recipe I wanted to try and with some amazing ingredients and some delicious liqueur options for the sauce I was able to prepare an incredible dessert.  My family loves bread pudding (well, who doesn't) and I thought banana bread pudding would be so yummy, of course, if it turned out correctly.  I have to admit I was worried the whole time I was making it. 

I used this amazing recipe (ps, this website has the most amazing recipes!) and left out the walnuts.  We don't love nuts in our banana bread so I thought leaving it out of the bread pudding was most likely a good idea.  The recipe was so easy to make ... you simply mix the wet ingredients, cube the french bread, and mix the two letting it soak in for 30 minutes.  Once the bread is fully soaked you simply bake it and what you have is the most amazing smelling dessert you will ever pull out of your oven.  Instead of the sauce the recipe recommends I made one of my own using Jackson Morgan Southern Cream Liqueur. I was not sure which flavor I would choose until it came out and I smelled all the yummy-ness.  It was a mix of banana and incredible spices and I knew then the Salted Caramel would be the ideal choice.


For the sauce I mixed together the following, 4 T butter, 1/2 cup brown sugar + 1/2 cup of Jackson Morgan Southern Cream Salted Caramel liqueur.  I warmed the ingredients in a sauce pan over low heat until the sauce began to bubble just a little and started to thicken.  Then you remove from heat and pour over your delicious bread pudding.  It would also be fabulous over vanilla ice cream and perfect over a delicious pound cake.



Of course I had to taste test the pudding + sauce before serving it to my family just in case it was another one of my baking failures.  I was thrilled to find that I had no only succeeded, but had made the most delicious thing I have ever eaten.  It was so good I can hardly stand it and immediately texted the whole family with my success. 

This would be an ideal dessert for your Easter dinner ... it is so yummy and the flavors mix together perfectly.  If you want a little extra salted caramel goodness I would recommend adding it to a cup of coffee to go with your bread pudding.  Talk about yummy ... 


I can't wait to try out the other Jackson Morgan Southern Cream flavors ... I have my eye on the Brown Sugar & Cinnamon and the Peaches & Cream ... can you even?? And stay tuned ... I will be using the Banana Pudding Cream over vanilla ice cream this weekend as well.  Doesn't that sound delicious?
